All stocked up! Meal prep doesn’t have to be Insta-gorgeous, and not all convenience options are bad for you. Baby food fruit and vegetable mixes are one of my favorite on-the-go convenience carbs. And before you say, “Baby food!? Gross!”…don’t knock it ‘till you try it! They’re shelf-stable, small and stash-able pretty much wherever, don’t have added sugars, and let you get a variety of produce regardless of what’s in season. Plus, a good dose of antioxidants doesn’t hurt. Don’t mess with the adult versions, go straight for the baby food aisle, you’ll get a bigger variety (lot’s of organic!), and no added flavors, colors, or preservatives. Pair them with a protein shake, low-sugar Greek yogurt, handful of nuts, or couple boiled eggs for a snack. They’re also perfect for easy meal carbs when you need something quick or portable. Bonus: There are TONS of flavors so it’s hard to get bored…just beware that you might become the proud new owner of the baby food aisle once you see all the exciting options.
